Pikelets with Poached Cherries & NUTELLA
INGREDIENTS
for approx. 8 pancakes
  • 1 cup (150g) self-raising flour
  • 1 Tbsp caster sugar
  • 3/4 cup (185ml) milk
  • 1 egg
  • Oil spray
  • 2 cups (300 grams) of cherries (frozen or fresh)*
  • ¼ cup (50 grams) sugar
  • Juice of ½ lemon
  • 60g (4tblsp) Nutella®
STEP 1
To make poached cherries, place the cherries, sugar and lemon juice in a pan. Cover and simmer for 10 minutes until the cherries are tender. Remove from heat and set aside to cool.
STEP 2
To make pikelets, sift flour and sugar together in a bowl and add a pinch of salt. Whisk together the milk, egg and add to the dry ingredients, continue to whisk until you the batter is smooth.
STEP 3
Heat a non-stick frying pan over medium heat and spray with a small amount of oil. Drop 1 x tablespoons of the mixture into the pan and cook for about 30-60 seconds or until the surface starts to bubble. Carefully flip them over and cook other side until golden brown. Remove from heat and set aside.
STEP 4
To serve, spread each pikelet with Nutella® and top with the poached cherries.

* Hint: To save time, you could use good quality tinned cherries.
