Hazelnuts

Hazelnuts are the fruits of the Corylus avellana L., a tree already well popular tens of centuries ago. In ancient Roman times, it was a custom to donate hazel plants to bring happiness. It was the same in France where the plant was given as a wedding gift to symbolise fertility.

The hazelnut tree thrives in the Mediterranean area, mainly in Turkey in the Black Sea region, but also in Italy, especially in the central regions of Lazio and Campania. In Italy there is also another place famous for its hazelnuts: the Langhe region in Piedmont where Nutella® was created. In fact, the Nutella® story actually started with hazelnuts, along with Ferrero's expertise and tradition with this fruit.

The hazelnuts used in Nutella® originate from Turkey and Italy, grown mainly by small holders . The hazelnuts are harvested between the beginning of August and the end of September.
Once harvested, the nuts are dried, cleaned and sent to the cracking plant where they are sorted , cracked, shelled, calibrated, selected and then packed and shipped to the Ferrero facilities.

We buy only raw, shelled, whole hazelnuts from the last available harvest.
Once in the factories, before the roasting process, we carry out quality checks once again to make sure that all selected hazelnuts meet our stringent standards.
Every day, groups of internal panellists in our laboratories ensure that the taste, the aroma and the texture are optimal in each stage of the process, in order to guarantee excellent product quality for our consumers.

We process hazelnuts directly in each Ferrero factory where there is a Nutella® production line.
This enables us to roast and finely-grind the hazelnuts at the last moment to further enhance their aroma. The output of this process is a silken 100% hazelnut paste, the heart of Nutella® recipe. It will be then mixed with the other ingredients within few hours in order to capture at the best the hazelnut fragrance in the Nutella® paste.

Since early 2000, we, as Ferrero, started to involve ourselves in the other stages of the hazelnut supply chain. Firstly, we committed to the farming and to the nursery production of hazelnuts, starting up cultivation in potential new regions of the world such as Georgia, Chile, South Africa and Australia, just to mention a few. This will guarantee constant high quality and freshness of the hazelnuts throughout the whole year thanks to an additional harvest in the Southern hemisphere from February to May. Furthermore, in 2014, we bought the family-owned Oltan Group, the worldwide leading operator in the procurement, processing and marketing of hazelnuts: this enabled us to acquire new skills and knowledge of the different stages of hazelnut selection and processing.
All these activities are brought together under one structure , the Ferrero Hazelnut Company, set up at the beginning of 2015.

The experience we have gained in buying and growing hazelnuts worldwide helps us in standardizing and promoting the best agricultural practices.
The Ferrero Farming Values Hazelnut (FFVH) is a programme created in 2012 specifically for hazelnut sourcing; it aims on one side to increase productivity and improve the post-harvest quality of our main raw material and on the other side to ensure that the production and the harvest is performed in a responsible and respectful way.
As of today, the programme has already established 95 model farms and held over 200 training sessions in 6 regions in Turkey, with approximately 14.000 farmers trained.
We are aiming to reach more than 25.000 farmers in 2016 and establishing over 100 model farms.

Moving towards a responsible supply chain through traceability
The aim of our Group is to ensure by 2020 that 100% of our suppliers are engaged to produce hazelnuts in respect of:
- national legislation in terms of working conditions (not employ any worker aged below the limit fixed by local legislation).
- Ferrero code of ethics
- Ferrero code of business conduct

In order to reach our objective, Ferrero has established a traceability system back to the farms and audits to the ground run by SCS - a worldwide leading certification firm - to verify compliance through unannounced controls during the harvest months August and September. The traceability system will cover 100% of our supply chain by 2020.

The traceability is managed in collaboration with GeoTraceability, enabling us to have a clear picture on the location of the orchards, the production of the farmers that supply Ferrero and the main issues they face to better understand the technical support needed. Specifically in Turkey, a team of agronomical engineers has been formed to provide assistance to the farmers throughout the hazelnut producing areas. With the support of a local NGO we provide training on Good Social practices to raise awareness on proper working conditions.
