Pikelets

Pikelets are type of a mini-pancake specific to Australia and New Zealand and a popular morning food as they are quick and fun to make (easily cut into shapes) and made even yummier with Nutella.

PIKELET RECIPE
Ingredients:
1 cup (150g) self-raising flour
1 tbs caster sugar
¾ cup (185ml) milk
1 egg
Oil spray

Method:
In a bowl, sift flour and sugar together and add a pinch of salt. Whisk together the milk and egg and add to the dry ingredients, continue to whisk until the batter is smooth.
Heat a non-stick frying pan over medium heat and spray with a small amount of oil. Drop a tablespoon of the mixture into the pan and cook for about 30-60 seconds or until the surface starts to bubble and a few of the bubbles have popped. Carefully flip them over and cook the other side until golden brown. Remove from heat, top with Nutella and strawberries and… enjoy!
