Little Brekkie Bread Puddings with Nutella®

INGREDIENTS FOR 2 servings (2 puddings)

  • Butter for greasing ramekins

  • 2 slices day old wholemeal bread, cut into 1 cm cubes

  • 10 raspberries

  • 1 large egg

  • ⅓ cup milk

  • 2 tbsp white sugar

  • 1 tsp vanilla extract

  • 1 tsp ground cinnamon

To serve
  • 15g (1 tbsp) Nutella®

  • Glass of milk (optional)

  • Raspberries (optional)

To prepare this delicious recipe, 15g of Nutella® per person is enough to enjoy!

METHOD

  1. Preheat the oven to 180°C. Lightly grease 2 ramekins, oven proof mugs or mini bowls with butter and then set aside.

  2. Toss the bread and raspberries together in a bowl and then divide between the two prepared ramekins, mugs or bowls.

  3. Beat the egg, milk, sugar, vanilla and cinnamon until combined in a small bowl. Slowly pour the mixture over the bread and raspberries, dividing it evenly between the two.

  4. Bake until set, usually 25–30 minutes. Remove the puds from the oven and cool for 5 minutes. To serve, spoon 1 tablespoon of Nutella® over the pudding. Enjoy them warm, with a glass of milk and a smattering of extra fresh raspberries if you wish.

    These mini brekkie puds are just as delicious with blueberries or any of your favourite forest fruits!
