METHOD
-
In a bowl, place the banana, oil and butter. With an electric mixer, mix until you obtain a smooth and homogeneous mixture. Add the eggs, sugar and vanilla extract. Mix until you obtain a smooth mixture.
-
In a separate bowl, mix the flour, baking soda, ground cinnamon and salt. Mix well.
-
Add the dry mixture to the wet mixture and mix until the mixture is smooth and homogeneous, making sure there are no lumps.
Prepare a non-stick cake pan and spread it with butter to prevent the mixture from sticking. Line the cake pan with baking paper. Spread the butter all over the baking paper.
Pour half the mixture into the cake pan. Cut the banana into slices and arrange it on the cake pan. -
Spread the Nutella® in the centre of the dough and pour the other half on top. Spread a small amount of Nutella® on the dough and, with a skewer, create a marbled effect. Add the remaining banana slices.
-
Bake the cake in the oven at 180 degrees for 30-40 minutes. Remove from the oven and let cool completely before turning it out.
Once cooled, remove from the mould and cut into 2cm slices. To serve, garnish with peaches and blue pea flowers. Sprinkle with lemon zest and icing sugar.
