Fluffy buttermilk pancakes with Nutella®, mango & raspberries

INGREDIENTS for 8 portions

  • 250g self-raising flour

  • 1 tsp. baking powder

  • 1½ tbsp. caster sugar

  • 360ml buttermilk

  • 2 eggs, separated

  • 1 tbsp. of vegetable oil

  • Pinch of salt

  • Butter for cooking

  • 15g Nutella® per serving

  • Raspberries

  • 1 fresh mango

To prepare this delicious recipe, 15g of Nutella® per person is enough to enjoy!

METHOD

  1. STEP 1

    Sift flour, baking powder and caster sugar into a bowl. Separate eggs and mix yolks with buttermilk. 
    Add yolks and buttermilk to dry ingredients. Whisk whites and fold into batter.

     

  2. STEP 2

    Rest batter for 10 minutes.

  3. STEP 3

    Cook for around 1 minute, or until small bubbles appear on the surface. Turn over and cook for a further 30 seconds, or until golden and thoroughly cooked.

  4. STEP 4

    Top with Nutella®, raspberries and sliced mango.
