Gluten-free pancakes with Nutella® & strawberries

INGREDIENTS

140g buckwheat flour
240ml buttermilk
2 eggs
2 tblsp. sugar
3 tblsp. coconut oil
1 ½ tsp. gluten free baking powder
Pinch of salt
1 tblsp. butter for cooking
150g strawberries
15g Nutella® per serving

DIRECTIONS

Sift dry ingredients into a large bowl and sift.

In another bowl combine your wet ingredients and whisk lightly.

Combine, being careful not to over mix.

Rest batter for 10 minutes.

Cook for around 1 minute, or until small bubbles appear on the surface.

Turn over and cook for a further 30 seconds, or until golden and thoroughly cooked.

Top with Nutella® and strawberries.
