PAN GALLEGO

This traditional Galician bread, which keeps fresh for a long time, is made with wheat flour and rye. In varying proportions, this is a very common mix in Galicia and, if the amount of rye is similar to that of wheat, the bread will have a relatively compact crumb with almost no honeycomb.
