Nutella® Crepe Cake Recipe

INGREDIENTS FOR 8 SERVINGS

For the cream:
  • 2 cups berry mix (frozen)

  • 7.1 oz cream cheese

  • 1/2 cup whipped cream

  • 1/3 cup sugar

  • 1 packet of cream stiffener (follow package directions)

For the crepes:
  • 3 1/4 cups flour

  • 1 2/3 cups milk

  • 4 eggs

  • 1/2 cup sparkling water

  • 1 packet of vanilla sugar (follow package directions)

  • pinch of salt

  • Oil/butter for frying

For decoration:
  • 1/3 cup Nutella®

  • 1 1/3 cups fresh berries

To prepare this delicious recipe, 1 tbsp of Nutella® per person is enough to enjoy!

PREPARATION

  1. Cream is being mixed together with a berry puree in a large mixing bowl by a wooden spoon.

    Puree the berry mix with a hand blender. For the cream, beat the cream cheese with the sugar, add the berry puree, and mix well. Whip the cream with the cream stiffener until stiff and carefully fold it into the cream.

  2. Eggs are being cracked into a large mixing bowl, which also contains flour and sugar to make a crepe mixture.

    Mix eggs with milk, sugar, salt, flour, and mineral water to form a smooth batter. Add a little more flour or water if necessary to achieve the desired consistency.

  3. A crepe is being cooked in a small frying pan, with a silicone spatula underneath it to prevent it from sticking to the pan.

    Heat a little oil/butter in a non-stick pan over low to medium heat. Pour a ladleful of batter into the pan and immediately swirl it around to spread it evenly and thinly throughout the pan. Cook for about 2 minutes, until the crepe is golden brown, then flip and cook the other side until golden brown. Remove the finished crepe from the pan and set aside. Repeat with the remaining batter. This should make enough for about 12-15 crepes.

  4. Nutella® is being spread onto a crepe base to layer the crepes into a cake.

    Place the first crepe on a large serving platter and spread with the berry cream. Place the next crepe on top, stacking all the crepes with the cream. Spread Nutella® between each crepe (about every third one) . Decorate the top of the cake with Nutella® and fresh berries.
