Fougasse is a type of flat bread, originally from of Provence, whose shape is reminiscent of a ear of wheat; it is crunchy on the outside and soft inside.

Already delicious au naturel, there are many other variations with fillings, both sweet and savoury. One of the most famous is the fougasse of Aigues-Mortes, a specialty from the Camargue region which was originally consumed at Christmas time. It is a sweet cake that looks like a brioche, flavoured with orange blossom.
